Vintage
Assemblage is the art of blending different varietals and terroirs to create rich, harmonious, and complex wines. In 2018, 7 different wines already aged 2 years in neutral barrels were blended by taste and returned to the barrels for 3 additional years. This 2016 was bottled in August 2021 after an exceptional 5 years aging.

Fermentation
Each varietals were separately fermented and aged for two years in old French and American barrels. In 2018 we made by taste the following blending: 37% Merlot 24% Cabernet Sauvignon 12% Zinfandel 11% Petit Verdot 9% Syrah 5% Sangiovese 2% Cabernet Franc. Then the blended wine went back into the barrels until August 2021 this Is a total of 5 years aging in barrels and one year in bottle before release in September 2022..
Tasting Notes
. The quality of the grapes, the care during the fermentation and the very long aging process give to this wine a lot of complexity. Fruit forward and full bodied this is certainly a rare and delicious wine.

Food Pairing
